All I can think is--Exhausted

Except for the half hour for FHE and dinner, right now, at 9:30 at night is the first time I have sat down today since about 8:00. I am exhausted. But, I do have 30 meals in my freezer, ready to heat and eat. Oh wait, only 28, I am still waiting for the last meal to cool so I can package it and put it away. Yeah for me! Last week our ward did an Enrichment on freezer cooking. I had always wanted to try it, and I figured with a newborn on the way this was a perfect opportunity. Now, they say you should not shop and cook on the same day, but I have proven that it is possible to do it. I was going to shop today and cook tomorrow, but I decided to do it all today so we could go to the pool tomorrow. Next time I do it, I will see if we like these recipes, I will not shop and cook on the same day, and I will also try to do better at cleaning as I go. I had a hard time doing that. See:
That is my kitchen after 7 hours of cooking. I had 2 bags of garbage and at least 45 minutes worth of dishes that are still sitting there (not tackling those till tomorrow morning) but did I mention that I have 30 dinners cooked!

We ate one of these dinners tonight and loved it. I hope it is as good when it is frozen first. I am sharing this recipe because Dan said it was perhaps one of the best things I have ever made. Here it is. You can always make this, cook half then, and put the other half in the freezer to have later. Anyway, here it is.

Chicken Tetrazinni
1 16 oz. package Fusilli
1/3 cup chopped onion
3 Tbsp. butter
3-4 cups cooked chicken
2 Tbsp. chopped green pepper
4 cups grated cheese
1 can cream of chicken soup
1 can cream of celery soup
1 soup can of milk


Cook fusilli in salted water for 2 minutes less than shortest time recommended on package. (Or substitute spaghetti.) Drain. Thoroughly mix all remaining ingredients with pasta in large bowl or pot. Put mixture in 2 freezer bags. Label and freeze. To serve, thaw and place in a greased baking dish. Bake uncovered at 350 for 30-45 minutes.

Note: I did not put in the peppers, and certainly did not miss them. :)

Wow, I'm impressed. I'm regretting that I missed that enrichment. Keep us updated on recipes...I'll have to try it out sometime.

WAY to go! I want to do it, but I'm afraid to try...sounds like a lot of work!

Mmmm...it was good. I made too much, but now I've got two extra casseroles in the freezer that I don't have to cook later and that is a really good feeling.

I am so, so impressed. Out of curiosity, did you find shopping for 30 meals at once to be more expensive then your normal shopping? This is the only reason why I am hesitant...
